Start with the symptom

Common Commercial fryer problems

A symptom narrows the inspection; it does not identify the failed component. The $150 commercial visit confirms the actual fault on the exact model before any repair is authorized.

Symptom

Pilot will not stay lit

Thermopiles, gas pressure and safety valves are measured in sequence - a failing valve is confirmed, not assumed.

Temperature

Fryer will not reach temperature

Thermostats, probes, burners and elements are separated by measurement against a calibrated thermometer.

Heating

Oil overheating or smoking

High-limit and thermostat behavior is verified immediately - an overshooting vat is a safety issue, stop using it.

Burners

Burner short-cycling

Thermostat placement, probe condition and gas supply are evaluated with recovery time in context.

Symptom

High-limit keeps tripping

A tripping high-limit is a symptom of a control or heat-path fault - do not keep resetting it.

Symptom

Filtration not returning oil

Filter pumps, O-rings, pickup tubes and return valves are traced before any part is named.

Symptom

Electric fryer trips the breaker

Elements, contactors and wiring are megger- and amp-tested; the building circuit is reviewed in context.

Controls

Computer or controller fault

Fry computers report faults by code; meanings vary by brand and generation. Photograph the display and data plate.

Series and model numbers

Commercial fryer series we service

Families below are examples of San Diego fry stations - the data plate identifies the exact series, gas type and BTU rating.

Model label

Where to find your Commercial model number

Fryers carry the data plate inside the door on the frame, behind the door panel or on the vat splash-back. Photograph the complete label — the full model and serial identify parts and production year better than the series name alone.

Indicators and alerts

Commercial fryer alerts & indicators

For any message not shown, use the manual for the exact model rather than a generic list.

Message / alert

High-limit lockout

What it means
Oil temperature exceeded the safety limit and the fryer shut down.
Safe check
Let the vat cool. One reset is reasonable; repeated trips mean thermostat or heat-path faults - book a visit.
Message / alert

Ignition lockout

What it means
The burner failed to prove flame within the safety window.
Safe check
One retry is reasonable. Repeated retries flood the burner chamber - stop and book a visit.
Message / alert

Filter / oil indicator

What it means
The computer flagged oil condition or an incomplete filter cycle.
Safe check
Complete the filter cycle per the manual and log recurring messages for the visit.

Commercial diagnostics

Commercial fryer faults, decoded.

Fry computers from Frymaster, Pitco and Henny Penny use their own code tables that change across generations. The data plate fixes the definition - the groups below show how fryer faults are actually confirmed.

Fault group · Ignition

Pilot and ignition faults

What it commonly means
Thermopiles, igniters, modules or gas valves failing to make or prove flame.
Safe owner step
Photograph the code and the model label, and press reset once. A single power interruption at the breaker is reasonable if safely accessible - do not repeat it.
What repair typically involves
Millivolt and ignition-sequence measurement, gas-pressure verification, component replacement as confirmed.
Fault group · Temp

Thermostat and probe faults

What it commonly means
Set point and vat temperature disagree - probes, thermostats or controls drifting.
Safe owner step
Photograph the code and the model label, and press reset once. A single power interruption at the breaker is reasonable if safely accessible - do not repeat it.
What repair typically involves
Vat survey against a calibrated thermometer, probe and thermostat replacement, calibration on the exact model.
Fault group · Safety

High-limit and safety-chain faults

What it commonly means
High-limits and drain-safety switches interrupting heat by design.
Safe owner step
Photograph the code and the model label, and press reset once. A single power interruption at the breaker is reasonable if safely accessible - do not repeat it.
What repair typically involves
Safety-chain verification end to end; the interrupting component is confirmed before replacement.
Fault group · Filtration

Filter pump and return faults

What it commonly means
Pumps, seals, pickup tubes or valves failing to move oil through filtration.
Safe owner step
Photograph the code and the model label, and press reset once. A single power interruption at the breaker is reasonable if safely accessible - do not repeat it.
What repair typically involves
Pump and line testing, O-ring and seal service, valve replacement as confirmed.
Any other code or behavior

Meanings vary by series and year

Why we do not guess
Commercial products span several control generations; the same characters can mean different things on different series. The complete model number fixes the definition.
What to capture
Photograph the full display and the model label, and note what the appliance is doing.
Next step
The $150 commercial diagnostic visit confirms the actual fault before any repair is authorized. Book a visit or call (619) 877-6701.

Commercial Fryer Repair in San Diego County

Fryers carry a surprising share of many menus: fries, wings, fish tacos, tempura, churros. When a vat goes down, the ticket times on everything else stretch. A fryer that overshoots temperature is also a safety problem, because hot oil is a serious fire hazard. Alpha Pro repairs open-pot, tube-type and flat-bottom fryers, gas and electric, including built-in filtration systems. We test the whole heat chain, from pilot or igniter to thermostat and high-limit, so the repair addresses the cause and not just the symptom.

Grease, Drafts and Coastal Moisture on the Fry Line

Fryers fail mostly from what the kitchen does to them, but San Diego conditions tilt which parts go first. Many gas fryers run on a standing pilot and a millivolt gas valve that generates its own tiny current from a thermopile. That circuit is sensitive to corrosion, and in coastal kitchens under the May-to-August marine layer, damp salty air greens the terminals on the valve and thermopile until the voltage drops and the pilot will not hold. Inland, open back doors are the usual way to cool a hot line, and Santa Ana winds, which can gust hard in passes and canyons between September and April, pull drafts across the fry station strong enough to blow out pilots. The heat itself stresses parts too. With El Cajon's hottest late-summer days reaching about 100 F, the cabinet below a busy vat gets very hot, and control wiring and switches age faster in that space. In dense restaurant clusters such as the Convoy District in Kearny Mesa, fryers are often packed shoulder to shoulder with woks and grills, so grease vapor settles on every component inside the fryer cabinet.

Fryer Faults Ranked by How Often They Stop a Line

Pilot will not stay lit

Symptom: Pilot lights while you hold the knob, then drops out when released. Cause: Weak thermopile or thermocouple, a clogged pilot orifice, corroded connections, or drafts across the pilot. Fix: Clean the pilot, test millivolt output under load, replace the thermopile or valve as needed, and address drafts. Gas smell: shut off, evacuate and call SDG&E first.

High-limit tripping

Symptom: Fryer shuts down with oil already hot, needs a manual reset, may smoke. Cause: The operating thermostat is failing and letting oil overheat, or the high-limit itself has weakened. Low oil level exposing the tubes also trips it. Fix: Test both controls, replace the failed thermostat or limit. Never bypass a high-limit; it is the last line of defense against an oil fire.

Slow recovery or oil temperature drift

Symptom: Product greasy or soggy, long wait between baskets. Cause: Carbon buildup on tubes or elements, a thermostat probe out of calibration, a weak burner or failed element on electric units. Fix: Boil out the vat, clean burners, calibrate or replace the probe or thermostat, replace elements.

Filtration pump problems

Symptom: Oil will not return to the vat, pump hums, leaks at the filter pan. Cause: Solidified shortening in lines, a clogged filter screen, worn pump seals or a failed motor. Fix: Clear lines, replace screens and seals, and repair or replace the pump motor.

Routine Fryer Care That Prevents Fires and Downtime

Oil management is equipment management. Filtering daily removes the crumbs that carbonize on heating surfaces and slow recovery. Boiling out on a regular schedule clears the rest. Keep oil at the fill line so tubes and elements stay covered. Check the pilot flame each morning: it should be steady and wrap the thermopile. Coastal operators should look for rust around valve connections; inland operators should plan for breezy days by shielding the fry station from open doors.

  • Every shift: skim crumbs and keep oil at the fill line
  • Daily: filter oil; check the pilot flame
  • Weekly or per oil change: boil out the vat
  • Monthly: clear grease from the cabinet and flue area
  • Twice a year: professional check of thermostat, high-limit and gas pressure

Making Room for a Fryer Service Call

Most fryer repairs need the oil cool and often drained. If you can, schedule the visit before you light the line in the morning; we start at 7 a.m., Monday through Saturday. Note the model and serial from inside the door, whether the fryer is gas or electric, and what happens when you try to light it. If you have a bank of fryers, we can often keep the others running while we work on one.

Fix the Fryer or Replace the Vat?

Thermopiles, pilots, gas valves, thermostats and high-limits are standard repairs and rarely justify a new fryer. The vat is what matters. A cracked or leaking fry pot, often from years of heating cycles, usually makes replacement the sensible choice, since the pot is the most expensive part. After the $150 commercial diagnostic we tell you plainly whether the pot is sound.

Helpful answers

Commercial fryer service questions

Clear preparation makes a service request easier to evaluate.

Which fryer brands do you repair?

Frymaster, Pitco, Dean, Vulcan, Imperial, Henny Penny and other major commercial fryer brands, gas and electric. Brand names describe the equipment we service - Alpha Pro is an independent company.

My fryer heats but food comes out greasy - can you help?

Yes. Slow recovery and low actual vat temperature are measurable faults - burners, probes and thermostats are verified against a calibrated thermometer.

Do you repair built-in filtration?

Yes - filter pumps, return lines, valves and seals on integrated and portable filtration systems.

How fast can a technician reach my business?

Same-day service is available across San Diego County for calls placed before 2 PM, Monday through Saturday. Tell us the equipment brand, model and symptom when you call - it helps us arrive with the right parts.

Does the $150 commercial diagnostic fee always apply?

Yes. It covers the on-site diagnosis of your equipment and is credited toward the total repair cost when you approve the repair. Residential visits are priced at $99.

What warranty comes with a commercial repair?

Commercial repairs include a 90-day labor warranty and up to 1 year on parts supplied and installed by Alpha Pro, both starting when the repair is completed.

Can I just reset the high-limit and keep frying?

One reset after a known cause, such as low oil, is reasonable. If it trips again, stop using the fryer. Repeated trips mean the oil is overheating, and that is how fryer fires start. The thermostat needs testing before the vat goes back into service.

Why does the oil smoke even at the normal setting?

Either the oil is broken down and its smoke point has dropped, or the fryer is actually running hotter than the dial says. Check with a calibrated fryer thermometer. If the reading is high, the thermostat or probe is failing.

Do you work on electric fryers too?

Yes. Electric fryers use immersed elements, contactors and electronic or mechanical controls. Common repairs are failed elements, burned contactor points and sensor problems. All electrical testing is done with the unit safely de-energized where possible. Tell us the voltage and phase when you book.

My fryer is under the hood fire system. Does that affect repair?

The fire suppression system is serviced by licensed suppression contractors, not by us. We work on the fryer itself. If the fryer is moved for access, it must be returned to its exact position under the nozzles. Flexible gas connectors and restraints must be reattached too.
