Why San Diego Is Hard on Back-of-House Equipment

The county packs several climates into one service area, and each one attacks commercial gear differently. Beach-side kitchens in Pacific Beach, La Jolla or Coronado breathe damp, salty air, which corrodes condenser fins, rooftop condensing units and the terminal blocks inside fryer and oven cabinets. Inland, the stress is heat. El Cajon averages an August high of 88.6 F, and its hottest late-summer day typically reaches about 100 F, so kitchen air feeding a refrigeration condenser is already warm before the fryers light. Santa Ana winds, about ten days a year between September and April, load coils and dryer lint paths with dust. Water is the constant. Laundry: commercial dryers running long or hot

Symptom: Two cycles to dry a load, hot cabinet, customers complaining about damp towels. Cause: Lint packed beyond the screen, restricted exhaust ducting, worn drum rollers or a failing gas valve coil. Fix: Clean the lint chamber and duct, replace worn drive parts, test burner components and confirm airflow at the exhaust.

Condenser coils are the big one: grease and flour blind them quickly, and a coil that cannot shed heat makes the compressor work harder every hour. Hard water is the second. Delime dish machines and steam equipment on a schedule set by your water, not by the calendar on the wall. Coastal operators should add a check of outdoor condensing units for corrosion; inland kitchens should plan coil cleaning before the September heat.
