Why County Water and Kitchen Heat Punish Ice Makers

An ice machine turns tap water into product, so it takes the full hit of whatever minerals come out of the line. Nearly all county water is hard to very hard. The City of San Diego reported 237 to 243 mg/L from its plants in 2025, and Helix, Sweetwater and Otay all sit in the hard range as well. In a cube machine, water is circulated over a chilled evaporator plate; minerals are rejected as the ice forms and flushed down the drain each cycle. The more minerals in the water, the faster scale coats the plate, the water pump and the distribution tube. Scale insulates the evaporator, so each batch takes longer and harvest gets unreliable. Heat is the second factor. Manufacturers note that output drops in hot rooms, and a line kitchen or a closet behind a bar can run far hotter than the dining room. Inland valleys push the problem further in late summer, when El Cajon averages highs near 89 F in August. At the coast, patio bars and outdoor kitchens expose condensers to salt air that corrodes fins and fan motors.

A Cleaning Schedule Built for Hard Water

Every ice machine maker publishes a cleaning interval, and most indicator lights assume average water. On San Diego water, plan for the short end of that interval. Use only the cleaner the manufacturer approves; the wrong chemical can damage nickel-plated evaporators. Clean the condenser at the same visit, because a clogged condenser makes the machine work harder and slows every cycle. Seasonal businesses should drain and dry the machine before a long closure and clean it again before reopening.
